I am looking for ideas on my next brew.

My favor types are
Brown Ale
Porters
Stouts
Scottish Ales

I do all all grain and have used a wide variety of grains.
I have used limited hops and only a few yeasts.

Any suggestions on something to try that I may like?
 
I would recommend a brown, porter, stout, or scotch ale since those are your favorites and I enjoy brewing my favorites. plus also all those are pretty much in season to start making.
 
Scadis Noel clone, this sounds good too.

What do you mean by oak it? Age with oak?

I have room to brew 2, so this will probably be one of them
 
Yes age with about an Oz of oak for about a week in the secondary. You do not want too much. Soak in spirts first for a day or so or boil for 10 min. to sterlize.

I plan on making this in a few week. Just finished a belgium ale using Wyeast Belgium Abby 1214 and saved the cake will make a starter using this first. I will use some irish moss as well.
 
Used a variety of grains but only have limited hops and a few yeast choices... Hmm...

I'd go with a stout or Scottish ale.

I did an Irish Red, modified with Munich instead of Pale, Next I will be doing something with Vanilla beans. I am thinking a porter or stout but I am tring to think of what else would be good with vanilla beans.
