I'm starting a batch of peach
I was going to add sugar and I'm wondering what is better to use
white sugar or corn sugar or a mix of the two
what is the difference in the two when it comes to fermenting
thanks

I have always heard that less refined sugar is better. I used regular brown sugar in my last cider and it worked great.

so the ferment time might be a little faster?
would it affect the taste that much?

The fermentation wouldn't be any faster, but the taste would change with brown sugar. Brown sugar has a molasses note to it. Corn sugar and cane sugar don't differ much in the resulting flavor or in the amount of fermentables they provide.
