I’m making some peach wine.

Is is better to ferment a peach grape juice or sliced peaches in a mesh bag with water and sugar? This is the primary fermentation.

If you're talking about using store-bought peach grape juice, that will make hooch. The grapes used in drinking juice are usually concord, which are good for juice; not so much for wine. When I want a decent wine, I use real fruit, so to make peach wine, use real diced peaches. Here's a good tutorial. If you want to make less than 5 gallons, direct scale it down. E.g. if you want to make 1 gallon divide everything by 5.
