does anyone else prime in the keg???? I do and also purge the keg with co2 2-3 times
to get some of the air out. I use corn sugar for natural carbonation because despite
what the Gas Companies say about their co2 , there is no way to know if their gas is low in Benzene and other bad stuff. I figure even if I purge and dispense with co2,
I am limiting my exposure to chemicals that at least are going to give you a bad hangover.
I was trying to figure out how to speed up my conditioning from 11 days to 7 days.Maybe it just `cant be done.
 
If you're naturally carbing you'll have to wait to standard 2-3 weeks. Only other way is to force carb via your co2 tank.
 
Okay, so I decided to 'sugar carb' in my keg...I mixed the necessary sugar fluid in the wort, bottled a 12-pack and then sent the rest into the keg...Now, I can't find my brewing notes to let me know what date I did this..However I have checked it the last couple of days by pulling on the 'pop off' valve and it issues forth a very vigorous stream of I presume to be CO2(as it burns the nose if I breath in too deeply)...Think carb is finished and can be tapped? Was kind of a beer experiment on my part..
 
Agree with MaryB. You'll also most likely notice a sweet taste to the beer if the yeast haven't had enough time to fully ferment the priming sugar.
 
Keeping the kegs warmer will help speed things up a little, or get more kegs and build a pipeline so you dont have to worry so much if it is done. Maybe switch to beer styles that are normally produced with lower carbonation.
