My first mead has turned out better than I hoped, though I am curious what it would have been like if I hadn't put that clove in each bottle.
 
Cloves... ugh! Those spices take a LONG time to mellow in my opinion. I have a Holiday Ale that I brewed last year and it is still to "clovey" after 11 months in bottles! Be careful with that addition ( ;
