Hi everyone,

I'm going to be brewing this on Friday. Take a look at my recipe and how I am treating my water.

My neighbor has made this before and really wants to make it again. I told him that I'm game!

Did a first taste test on 12/11. Was a good time to check the gravity level.

My brewing assistant chose to pitch this dry, no rehydration, 3 packets of S-04. Not my style of doing things, but I agreed.

As of 12/11, she's 1.024. Very good and well within target range. We're going to let her go another week, for a total of 3 weeks of fermentation time.

12/29 was brew day/pitch day. So for 12 days and that much of a drop from 1.104 OG, that's really not bad performance at all from S-04.
