I was inspired to brew a light-colored, herbal/spicy IPA that finishes dry. Not trying to mimic any particular style or beer.
Hops: I've had good luck with sterling in saisons and read about Russian River's all sterling IPA that sounded great. Reading hops profiles, I thought glacier might be nice for more aroma and perle for mint notes. I'm open to suggestions if anyone thinks the hop schedule below needs to be tweaked. Or if anyone has had bad luck with any of these varietals.
Yeast: Reading about the new Greenbelt yeast Austin Homebrew is selling, it sounds like it might let the hops shine without that peachy thing I've produced with 1057. Any thoughts on other options to get this as dry as possible and highlight the herbal/spicy hop profile? As a last resort, I may just go with the 3711 French Saison yeast, which always treats me well. I wanted to keep this focused more on hops and less on yeast (or malt). 1098 maybe? Pacman?
Here's the recipe I'm playing around with:
2.5 gal.
4 lbs - extra light LME
.5 lbs - corn sugar
15 min: .75 oz sterling /.25 oz perle /.25 oz glacier
10 min: same
5 min: same
FO: same
OG: 1.064
IBU: 69
