That's how.
After conditioning my barrel, it was leak proof and ready to mash and boil.

Used 8 Dzn granite rocks 3 times. To bring wort to strike temp. Mash, stabilize, step, then boil.

I DID NOT strain the wort from mash. Left it in. Added hops. Left it in.
Mash ph was 5.3 whole way through.
Over boiled by .5 gal
Put 2 Dzn rocks in bucket to ferment with it.
Was racked off, through cooler with ice, into bucket.
Made 5% abv ancient style beer.
Had a fermentation temp issue, but other than that. It's ale!
Do not try this. It sucks. Hardest I ever worked on a beer and not worth the trouble. There is a good reason why we have come as far as we have brewing beer. Respect that!

Racking and adding rocks was misplaced. Switch those two around for proper order.
 
Awesome. I'm having two brewer friends coming over in a week to make Steinbier the hard way, at least some of the way. We'll be using the rocks for the boil only, and although it's supposedly more authentic to include the mash in the boil, we'll collect the wort and boil it without the mash.
 
And I thought the Mumme' gruit fest ale was complicated. Geez. It's a stein beer as well. I always felt for the brewers back then, since this way was all they had. Makes ya glad we have better doesn't it?! :tank:

I did this in Florida. oCWO, I've made it that was too. Came out great! Much better than this time. But I wanted a challenge.... [emoji35][emoji379]. That said, don't try to boil for an hour. Go by volume. Both times I got less than I wanted. First time I over boiled by a gal and half. Had that one on a burner to help hold temp. Used 2 Dzn rocks, 3 at a time, over the course of an hr. I will do that one again.
