Sorry, Ive gone thru about 30 different threads in the last couple hours and still cant figure it out. Im turning my chest freezer into a Keezer. I am hard wiring it instead of using an outlet. I already cut and spliced the wires going to the freezers thermostat. There were only 2 wires connected to the thermostat, (not counting the ground or probe). There is a power and also a wire that goes comes from the compressor. I know im supposed to connect #1 #7 and power together....I think atleast. Now what about the compressor wire? Does that just go to #8. What goes into stc1000 #2, the power neutral ?
Any help would be appreciated.

I'm sorry I can't tell enough from your photos, but I can tell you that your only going to need to run 2 wires to the STC. The wire that the thermostat uses to make or break a connection when the temperature change is the one your looking for. There will be a ground wire on the thermostat as you mentioned, there may be other wires that aren't actually being used "by" the thermostat, but could be there to make connections to other things such as that compressor light or capacitor.

So you shouldn't have to worry about any wiring in your freezer except the cord coming from compressor motor. Leave thermostat wiring the way it was, that will control it's freezing set points and you will never get that cold so it won't ever shut your compressor off with the Temps you will be operating at, that is what your thermocouple is for. So run 120vt to terminal 1 on your controller then run a jumper from 1 to 7, run black wire from cord to term 8, run 120vt supply neutral to terminal 2 and also run white wire from cord to terminal 2. Terminal 3 and 4 if for you thermocouple +/-. Run all ground wires to ground and set up controller...
