I started a tart cherry mead that I pitched a wyeast lambic blend into. I racked 5 gallons off and after a few months I backsweetened and bottled it.
I saved 1 gallon and added a pound of frozen cherries to let it ride and see if I could get more of a lambic style to it. The mead is only around 5-6% ABV. The one gallon batch has been sitting on the cherries for almost two months and I just checked on it and saw this:
I can't tell if it's the start of a pellicle or if it's mold from the cherries.
For the first month I was swirling the carboy to try and move the cherries around but for the last month i've just let it sit. It's been fully airlocked and the airlock has had sanitized water in it the entire time.
Should I just let it sit for a while longer and see what actually forms or is this something that I should just dump?
