Starsan is a safe, no-rinse sanitizer. The small amount that is left in a vessel after pouring it out won't hurt. I've been told that yeast will break down small amounts anyway. Don't fear the foam. :)

The few times I made kombucha, I used the same cleaning and sanitizing methods I use with beer. Star San works great and the the kombucha came out fine.

Glad you're being clean with Kombucha. However it is fairly overkill for making Kombucha and other wild fermentations. The acid of the ferment is going to prevent anything really nasty from growing, and because you're already introducing Lacto bacteria and probably acetobacter, you don't really need to sanitize. Just make sure your fermenting containers are free from grime and sticky things and you'll be a-ok!

I use star san to sanitize my kombucha equipment as well. No adverse effects. Probably overkill, but I'm the paranoid type when it comes to sanitation.
