if you do take a shot at a clone or the NB kit, I'd definitely suggest the kolsch yeast from white labs ... wl029 ... if you don't make starters yet, that's ok ... that yeast works fine directly pitched into 1.050 and under wort IMO and in my experience ... good luck !!
brewing a spotted cowish version of a cream ale with the 029 tomorrow. i think i have it at 17% corn, a little flaked barley, a little munich, a little 20l crystal, and the rest 2 row. anxious to see how the kolsch yeast works out.
Brewing 5.5 gal AG version tonight. This will be my first go with WLP029 German Ale/Kolsch. Made a 1/2 L starter yesterday and I can t wait to get this one in the carboy.
BTW... I'm open to suggestions or tips on the 029. Figuring on using a swamp cooler as my ferm freezer will be tied up with my Dopplebock for another 6 weeks.
