I am planning to brew my favorite Irish blonde next week and I'd like to split the batch into two 2.5 gallon batches. If I were fermenting the whole batch in one 5 gallon carboy I'd be using 1 Wyeast smack pack.
I've never split a batch before and not sure what to do when pitching the yeast. Do I split the batch and just use half the smack pack in each or pitch the yeast in the whole batch and then split it up?

You could do either. Pitching first may be a way to evenly destribute the yeast rather than trying to eyeball from a smack pack.
