I could probably get a seal using some sealant but I'm thinking this is going to cause sanitising issues...? any thoughts?

Sealing it back together is definately asking for sanitation problems. Sorry to hear about your loss, thats a bummer. At least plastic fermenters are cheap!! (unless we're talking about better bottles)
