I don't see why you couldn't do something like that. My xmas ale this year had too much hops (did I just say that?) so its more like an IPA than what I wanted which is more of a winter warmer. Back to the drawing board for next year.
My thought was aging on Captin Morgan's Rum soaked oak chips and then maybe adding a little extra spice to it. Can't think of what spices would go well with it.
