Made a pumpkin ale partial mash using real pumpkin, sat in primary for 3 weeks, transferred it to a secondary just now and tasted a sip. It has a sour bite to it. I'm wondering if this is from using the real pumpkin, my blow off tube being too deep in water, or will it go away after another week in secondary off the trub and 2 weeks of bottle conditioning? I was anal about sanitization so I guess I'm scratching my head.
