So I made a wheat beer about 5.5 percent. I ended up with 5.75 gallons and since I keg I put the other .75 in a 1 gallon fermenter. I want to do a sour experiment. I am planning on just using dregs from a bottle. 1. Would this work. 2. Any suggestions on what dregs to use
 
The ones to use are the ones you have from a sour beer you like.
Look for something on the label that says its not been pasteurized or active yeast are present. Many lists of good bottle dregs exist on the internet, but it's impossible to keep 100% up to date on what dregs work good and which ones don't.
 
Should I add all the dregs considering its less than a gallon. I forgot to mention that this has already fermented out using 001 if that makes any difference. I'm new to the whole sour project

Yes, add all the dregs. Leave a little beer in the bottle so you can swirl up everything off the bottom to dump in. The amount of bugs in one bottle is tiny, so the more dregs, the better. If you want sour, make sure the beer has lacto and/or pedio. Brett only beers will not make it sour.

Chec out the lambic section. Pitch the dregs and let it ride to 1.002. Brett will eat everything the yeast don't and add a different flavor. Only way to really find out is to pitch the dregs and let it do its thing.
