I recently bought some cider and was curious if I could use it to make hard cider. It is pasteurized and it says there is potassium sorbate for freshness. I bought three gallon jugs and set them on my back counter about a week ago......I went to move them today and I noticed the jugs were blown up like a balloon! So there is some fermenting going on. Can I transfer these to a carboy and add yeast and sugar???

Sorbate is a pretty effective preservative. If they are fermenting on their own, I would think it's pretty much over for that cider. I don't know of many yeast strains that can overcome sorbate.
