Great setup, OP. Do your vessels sit right on top of your heat shields, or do they vent out the back (can't quite tell). Many here have expressed concerns about vessels resting diretly on the frame, with the heat shield flush with both - no place for heat to go. I'm about to pull the trigger with my welder, so curious what your thoughts are.

Secondly, maybe a more general question - but I'll need a 5L flask as well, and I was looking at the 5L Stirstarter from AIHB. But you remind me of the maelstrom. How do you find it, for this large a starter (looks great, your starter, so I presume, a big positive). Anyone?

To answer your question I find that babies mash well at about 102F. You want to avoid over aggitating them at dough in or your going to have bad time. Also, they only need about 10 minutes before conversion is complete, otherwise they start to take on a pruney quality.

Yeah, they do sit right on the burners, I haven't had any problems with it personally. I'll see if I can find some pictures tomorrow of the stand. It's all stainless too, btw.

I really like the maelstrom, never had a problem with it out of the 30+ starters I've done.

Great, thanks. I've not been too assured by the venting system, as you lose one strut for the vessel to rest on. On the other hand I have heard from so many who indicate they really need to be able to exhaust that heat, else it rises up and around the vessels. My design is basically the same one everyone has done. If needs be, I can always place a shim up top to raise the vessel.

Excellent setup!! I'd be lying if I said I wasn't completely jealous!!!! Welcome to HBT.

By the way, when I saw this, my immediate reaction was, "Why is he peeing on your false bottom?"

To say I am jealous is really nothing more than an understatement. Sweet setup indeed!
