And obviously over carbed as it went everywhere! Lol got most of it in my glass. Turned out quite good! Not amazing or great but good! Drinkable! Enjoyable for a Porter and for my first go at it. I'm just so excited! I was so stressed about infection or o2 or not carbonating. And gave me a bit of a buzz so not horrible by any means!!!

More batches = less worrying each time. Brewing beer is kind of like having kids - the first one gets all the worry and unneeded attention, and even if it turns out a little f'd up, you still love it.

Each batch worries you a little less every time, and pretty soon you're watching 5 gallons of beer eat dirt and play in the road, and letting your kids go a little too long in primary.

Wait, what?
 
WELL done. Drinkable is all i hope for, because 5-10gal of NonDrinkable is heartbreaking.

Next were doing an RIS which will sit for a few months in the 6.5 carboy and in the other fermenter grapefruit IIPA
 
Congrats on your first beer.

You will learn the art of patience and to not worry about your brews eventually.

More batches = less worrying each time.

I have brewed enough so most of the time I forget what I have in my fermenters.
 
5-7 days fridge time can settle them down & make them more easily pourable. Clearer too by compacting the yeast & trub on the bottom of the bottle.
 
Tasty! Just started a stout and porter this week, so i'm looking forward to having a stockpile of dark beers.

If you open a beer that hasn't been bottled long, there will be a lot of suspended yeast and that yeast becomes a nucleation site for the CO2 and will make your beer gush even if it carbonated perfectly. Given a few more days that yeast should settle out. Putting them in the refrigerator is like doing a cold crash and settles the yeast out even faster.

If your beer continues to gush even after sitting longer and being refrigerated longer, you may have an infection or you may have added too much priming sugar, or you might have bottled before the ferment was complete. Put this batch of bottles somewhere that can contain the glass if a bottle should explode. A cardboard box will be sufficient if it has a lid on it. Plastic tubs with lids are better because they will contain the beer that sprays out too.
 
Congrat's and welcome to the club! Your beers will get better and better with each new batch you make, as you learn more and perfect your skill. Prepare to drop some coin as you update your brewing equipment along the way, it's a wild ride! :D

I tested it with the hydrometer, the FG has not dropped which leads me to believe it has neither fermented down more, nor become infected. Also they are in a Rubbermaid bin as I was quite worried about a bomb. I've had one in the fridge since yesterday to Crack open tonight for the game. Got a good little buzz off of the 12 Oz bottle lol
 
As an update kims orange Porter is turning out well. Cracked one open tonight and it is carbing great! I put way less sugar in this time, it had great head retention. Very strong citrus in nose and taste but we learned the hard way a little goes a long way! Over all though I like hers more then the stock version. We made one bottle of half her orange one and half my oak Bourbon one. Thinking that one is going to be awesome! Really quite happy with how they are coming along! Love it!
