well, I got the itch to do some smoking today. It's been a couple months since I last pulled the smoker out of the garage. I remember it was right after my daughter was born when my in-laws came to visit, so It'e been about 3 1/2 - 4 months.

I bought a small pork shoulder, about 4.5 lbs. Slathered it in mustard, put a nice rub on it, and draped the top with bacon.

I also bought 2 racks of baby back ribs. Same thing, good coat of mustard and a thick generous coat of rub. I used to different rubs, just to see which one we like better.

In the bowl bveneath the meat I put a couple bottles of Apfelwein and HB Red Ale, a little worcerstershire sauce and a little balsamic vinegar. I'm using Pear juice as my spritz because I ran out of Apple Juice.

I had a little ground elk left over from when my buddy went hunting, so I whipped up a few burgers to snack on while we wait for the ribs to be done.

And for that I will be running to the liquor when SWMBO wakes from her nap.
I'm thinking Stone Smoked Porter, or Alaskan....I don't think there's much else to choose from.
 
Both are good choices, but if I had to pick one it would be Alaskan SP. It was the beer that really got me into smoked beers and smoking my own malt.

I put aluminum foil around the lid to get a better seal. It just helps to keep the smoke in. I haven't had a chance to do some of the standard mods to my ECB (El Cheapo Brinkman). Maybe someday I'll upgrade to the Big Green Egg like Edwort has.
 
yeah, the desert landscaping is really the cheaper route out here. But grass is nice to have.
 
I really like pork tenderloin for smoking. Been having trouble finding it up here, so I did a shoulder last run.

[When I lived in Vegas, I had a 40x12 ft covered patio. I planted grass for another 10 feet, so I had 400 sq. ft. of grass total. The rest of the 1/2 acre was desert.]

Wrapped the ribs in foil to cook in their own juices for about an hour or so.


About time to go get some beer.....if only SWMBO would wake up from her nap.

I hear ya man. I just lit up both Big Green Eggs. I have 8 Boston Butts almost ready to put on (64# total) for tomorrow's Oktoberfest.

I'm having commemorative pint beer glasses made with this handy artwork from billpa.

Still got to cook up 130 brats tomorrow before setting up the brew board with 8 faucets. Pics to follow.

Off to rub some butts now.

WOW Ed, that sounds like a good time. Have fun tomorrow. What beers are you serving? I'm guessing Apfelwein, Bavarian Hefeweizen, and House Pale.... what else?

Thanks man, it's gonna be some work, but it should be fun. I have a 2x2x4 farm water tank that holds 13 cornies on ice. We're serving 7 homebrews and 1 micro tomorrow. Here's the Menu.

Light Lager
IPA
Haus Pale Ale
Typical English Ale (TEA)
Homestead Haunted Ale
English Pale Ale (from Uncle Billy's Brewpub)
Bee Cave Brewery Oktoberfest (this is my best brew ever)
Bee Cave Brewery Apfelwein

Plus a couple cases of German white wines.

Combined with about 35 pounds of pulled pork, 130 brats, various side dishes & desserts.

Music provided by a pair of Mackie SRM450's on stands, a Behringer mixer & an iPod of German Beer hall music. We'll be cranking Ein Prosit through the night at 1,000 watts. :D

Sugar Free Red Bull Rocks for road trips! Don't go on a over 3 hour drive without it.

I should have taken a picture before I poured on the BBQ sauce. I had a pretty nice smoke ring going....:cross:
 
What kind of wood do you use for the smoke? I got an el cheapo (really cheap!) grill/smoker from my sister and am learning how to use it. I did a chicken last week. I am not sure if I did it 'right' but it tasted pretty damn good.

beer can chicken? Sweet. I usually always have a chicken below my ribs...sxcept for today I had the Butt.....

I used Hickory today. if you can get ahold of cherry wood it's real nice and has a great smell. I have also used Mesquite, Maple, and Apple wood.

I actually used a Coke can with beer in it...Breckenridge Vanilla Porter.

Yeah I used hickory. I will probably get things worked out with it...I really want to use some apple but it is a little pricey for not knowing exactly what I am doing.

Do you put the wood chips right on top of the coals?
 
yeah, but soak them in water first...this will keep them from actually burning...you just want them to smolder. I usually throw them in a bucket of water the day before. :ban:

I actually soaked mine in the beer:D I have seen some smokers that have a separate level/pan above the coal for the wood.

I am planning to do some pork in about 2 weeks while brewing my Oatmeal Stout.
 
Had to post a picture of my smoker cuz I love it so much...
It can cold smoke, hot smoke, barbecue, grill, all without wasting precious propane that could be better used to fire up the brewburner...

That's the same one we have. We're on an insane budget. Can't spend much. Got it for $35 lightly used. I'm not complaining. We only used it once before the cold set in around here, but I think it'll be a fun toy once the weather warms up...
