What kind of wood do you use for the smoke? I got an el cheapo (really cheap!) grill/smoker from my sister and am learning how to use it. I did a chicken last week. I am not sure if I did it 'right' but it tasted pretty damn good.

beer can chicken? Sweet. I usually always have a chicken below my ribs...sxcept for today I had the Butt.....

I used Hickory today. if you can get ahold of cherry wood it's real nice and has a great smell. I have also used Mesquite, Maple, and Apple wood.

I actually used a Coke can with beer in it...Breckenridge Vanilla Porter.

Yeah I used hickory. I will probably get things worked out with it...I really want to use some apple but it is a little pricey for not knowing exactly what I am doing.

Do you put the wood chips right on top of the coals?
 
yeah, but soak them in water first...this will keep them from actually burning...you just want them to smolder. I usually throw them in a bucket of water the day before. :ban:

I actually soaked mine in the beer:D I have seen some smokers that have a separate level/pan above the coal for the wood.

I am planning to do some pork in about 2 weeks while brewing my Oatmeal Stout.
 
Had to post a picture of my smoker cuz I love it so much...
It can cold smoke, hot smoke, barbecue, grill, all without wasting precious propane that could be better used to fire up the brewburner...

That's the same one we have. We're on an insane budget. Can't spend much. Got it for $35 lightly used. I'm not complaining. We only used it once before the cold set in around here, but I think it'll be a fun toy once the weather warms up...
 
Just stumbled across this thread and figured I would share my set up with you guys. She aint pretty but she sure can smoke.
