Small Batch Kettle and Induction Burner Recommendation

I have been brewing 5-gallon, two vessel, all grain batches for 6 years. For multiple reasons, I am going downsize and start brewing 1.5 gallon batches. One of my goals is to simplify my equipment setup and process and eliminate the use of a propane burner. I am planning to do BIAB and possibly use a sous vide stick to maintain mash temps.

I figure I need a 3 gallon stockpot. I want one that is induction ready. Anyone have recommendations?

Also, I think I want to go the induction route. I only have access to 120V so 1,800W is my limit (as far as I know). Anyone have recommendations?

Finally, am I barking up the wrong tree? Should I just go with a standard electric burner instead of induction?
