Well, I did it. I may be the first person to mess up a simple batch of skeeter pee :(.

:

Periodically check the gravity. When it gets down to around 1.050, add the other 3 tsp of nutrient the second tsp of energizer, and the last bottle of lemon juice; vigorously mix it in. Don’t be afraid to introduce some oxygen to the mix at the same time. This late addition of yeast food and oxygen helps reduce the likelihood of your batch developing a sulfur-dioxide problem. (Because of the high acidity and low nutrition, lemon has a higher propensity to developing the sulfur-dioxide rotten egg smell.) After a couple of days, you can rack into a clean, sanitized carboy.

Allow the Pee to ferment dry and for fermentation to stop (SG between 0.998 and 0.995). Rack into a clean, sanitized carboy. Give the batch a quick degas (use agitation and vacuum if you have the equipment). Add 1/2 tsp Kmeta, 2 1/2 tsp sorbate, and Sparkolliod (follow directions on the package). After two weeks, the Skeeter Pee should be crystal clear. Rack into a clean, sanitized carboy, add 6 cups sugar, and stir to dissolve. Wait two weeks to be sure no new fermentation begins and bottle.

I don't know how spaced out I must have been to mess up this much across a period of a few weeks. The red represents steps that I believe were missed. The green represents where I currently am. I began racking into a new carboy, but stopped after realizing all the things I had missed. The small of the pee wasn't necessarily good either (not sure how to describe it).

I believe I missed the addtional can of lemon juice highlighted above in red. Can I just add it now? I think I missed it because I bought the exact amount needed, but have found another bottle sitting here :(.

So at this point I am sitting here with my new carboy half filled wondering if I should continue and waste six cups of sugar on this disaster. I can add pictures of the cleared pee if you would like. Thanks.

Taste it...! I usually hold off on the last bottle of lemon juice until the fermentation is complete. As long as there wasn't any dead bugs in your carboy, you should be alright... Let it ride, taste it and add more lemon juice if you want. I usually add more plus some lemon zest to mine before I bottle.

The batch I'm running now has been split in half... Half to a keg to make Sparklin' Pee and the other half has 2lbs pureed strawberries in it.

Thanks for the quick response. The pee tastes just okay. I feel like it tastes a little like stressed yeast or maybe something else ( I am probably just being picky). I am going to add the sugar and see how it tastes properly sweetened and then wait two weeks to bottle.

I will be trying the lemon zest this batch and definitely will be trying the pureed strawberries in the future. :rockin:

Thanks again
