I was thinking of ordering a single hop IPA extract kit from MoreBeer.com with a Belgian yeast strain. Has anyone experimented with this combo? What kit/yeast did you use? Did you like it? Is there anything you would do differently? Thanks!!!
 
I like fruity hops with the belgian yeasts. Seems more complimentary than the other side of things.
 
Haven't done it myself. But looking at the list, Mosaic and Calypso stand out to me as likely going well with Belgian yeast. Falconer's Flight, too. As to precisely which yeast... That kind of depends on what sort of Belgian profile you want.
 
I've used wlp530 with success. Citra and Amarillo were the flavor hops. I would probably stick with wlp530 (westmalle) since it's reported to be the least phenolic. Up to you and how much yeast funk you want.
