So I finished up a kit last weekend (first ever) and its fermenting, but the suspense is killing me, so I'm going to brew again soon.

I've heard the Simply Beer kits are solid beers but want to know if anyone has changed up or added to its recipe to give it a different flavor? Any suggestions would be greatly appreciated!

Ps: I have Swig of Sunbeams fermenting and would like to try something a little different.

I've brewed all the Beer. Simply Beer recipes, some of them multiple times, they're pretty good by themselves without any changes. That being said, I've added oatmeal to the stout and cherry flavoring to the wheat and those worked out pretty good. I just bought the lot again and have started brewing them.
 
I'm a fan of www.brooklynbrewshop.com.

They have kits that of course can be re-used with pre-packaged recipe mixes, so if you've already got the equipment, you can take a look at their mixes.

EDIT: these are 1 gallon, so may not apply.
 
The simply ipa with about 5lbs or so of canned or frozen mangos is awesome!
The wheat with some brewers beat pomegranate is also good
The pale ale with brewers best raspberry is amazing

I've also added oats, lactose, vanilla and green apples and strawberries to the ipa them dry hopped with citra hops to make a milkshake ipa

These kits are awesome starting points

The milkshake IPAs are really good. I could help you craft one using that kit if you would like! the only issue I had was when bottling all the sugar from the fruit caused some bottles to over fizz when opened

Thank you, maybe next time. For this time, I'm going to add cacao nibs to the stout and split it at bottling to add coffee to half. Any idea how much?
 
I would caution against making changes so soon. Get your brewing processes down first then start making alterations to proven recipes. Start small. If you start off making changes right away and get something not wanted you will not know if it is your process or the recipe.
