Simple starter overflow question

Made a 2L starter for Edinburgh Ale Yeast for a Strong Scottish Ale and it worked (really) well. Just curious since I have never had a starter go so strongly, is the tan goo from the overflow yeast or some kind of waste? This one spilled over three time like this.

Try to acquire some FermCap. It's a silicone based liquid that breaks up surface tension to prevent foam overs. I use 2 drops in the starter boil, 2 in the starter itself, 8-16 in the full boil, and 8ish in the fermenter.
