looking for a bit of advice on a simple saison recipe I came up with. I'm normally a crazy experimental brewer and i'm trying to tone it down this time. I was going to put some American hops like Cascade in it for fruitiness and some orange zest but I thought i'd play it safe and let the yeast do the talking

BIAB method.60 min mash
4kg - german pilsner
.5kg - german wheat malt
.5kg - caramunich III

hops:
56g Hersbruker @ 60 4%A.A.
28g Hersbruker @ 5

yeast:
Danstar Belle Saison yeast
 
I like this. Keep it simple. I recently brewed a saison that was 96% Pilsner and 4% C60. So far, it's incredibly flavorful and tart. I think, with saison yeast, you/we should let the yeast shine through. By over-doing the malt profile, you might lose the character you get from the yeast.
