I love the pine taste of Simcoe and think it could be great in a stout on a cold dark night here in New England this winter, here's what I have in mind. It ended up being imperial to balance out the IBU from the Simcoe.

I'm still extract brewing, so here it goes, the math is from Hopville:

OG: 1.086
FG: 1.023
SRM: 35
IBU: 52.2
ABV: 8.4%

Fermentables

9.9 lbs Pale LME
1 lbs Clear Candi Sugar
.5 lbs Crystal 120L
.5 lbs Chocolate Malt
.5 lbs Roasted Barley

Hops

1 oz Simcoe 60min, AA:11.9%
1 oz Simcoe 30min, AA:11.9%
1 oz Simcoe 10min, AA:11.9%

Yeast

WPL004 Irish Ale

Can anyone tell me is this looks ridiculous as I tweak it?

Thanks!

Yea, I was thinking of backing off on the LME and removing the 10 minute all together. Maybe move the 30 to 20 and just use 2 oz.

I have no problem with the schedule. Lots of hops in a stout come across different than in a PA or IPA. If it were mine I would using a second hop instead of all Simcoe.
