I'm trying to come up with a brew that solves 3 problems: 1.) I have 3 pounds of 2012 Simcoe whole leaf hops that I need to use, 2.) My parents are coming in to town for my graduation on May 17th, and 3.) My fermentation fridge is currently full, and my office closet is set to 75F to keep a BDSA warm, so it needs to be something that can ferment warm. My solution: Simcoe Saison! This should hopefully have a monster piney/citrusy flavor that will play well with the fruit and spice from the Saison DuPont yeast.

I'd love feedback on the recipe, particularly for using such old hops. One of the hop calculators told me they'd be down to 1.5%AA, so flavor/aroma only for them.

Sounds good to me, I do a lot of American hopped saisons in the summer time. I usually go a little simpler on the malt side, 90% or so pilsner and 10% wheat but that's just me.
 
I brewed a simcoe saison not too long ago. I thought the flavors went really well together. I went with a much lighter hand on the hops but since you have so many...
