Simcoe Pale Ale - Thoughts on hopping

I have 1.5 lbs of Simcoe hops I need to get using. Was planning on making a sesion IPA (or hoppy Pale Ale) with some of them.

1.050, 2-row, 0.5 lbs light Crystal, and 1 lb sugar to help dry it out. Mash low; want to end below 1.010.

Use a neutral hop to bring up to 40 - 50 IBUs, if necessary.

1 oz Simcoe @ FWH
1 oz Simcoe @ 15
1 oz Simcoe @ 10
1 oz Simcoe @ 5
2 ozs Simcoe @ 0 (added at 170 F and left for 30 minutes before cooling)
2 ozs Simcoe Dry Hop.

Any comments on above are welcome.


The main question I have is: Would the Simcoe be improved if used in combination with another hop, or is it good on it's own. I recently had a commercial Simcoe beer and it was great (had a case of bombers - took my time to savor the flavors; but all gone now)

I have a pound of Amarillo somewhere, plenty of Citra, Cascade, Chinook, Columbus, Centennial, and many other hop varieties, even a few ozs of Mosiac.
 
+1 on no sugar. Dry it out by mashing low. Say 148°-150°. Also why not put in your last addition @ 0 minutes & whirlpool for 20 minutes. I think you'll get better utilization.
I also like Pale Ale Malt vs plain two row. A little more color, flavor , & body.

I don't think you'll need anything besides that 1 oz of Simcoe FWH to bring the IBUs up. They'll actually probably be too high with that combined with the IBU contribution of your late hops. I just put it in my Brewer's Friend and it's at about 96 IBU (rager) for a 5 gallon batch. I put the FWH in as a 60 minute addition because Brewer's Friend incorrectly calculates the IBUs of FWH additions like they were 20 minute additions.

I would go to 0.25-0.5 oz FWH depending on the alpha acid %.

And I agree with the others about dropping the sugar.

Other than that, the recipe looks great! Enjoy!
 
I've dropped the sugar, will mash low as I like these dry.

The FWH may give me the IBUs. I always input them as a 30 minute addition as I think it is subdued. I've yet to put this into a calculator. May try tomorrow.
 
Here is what I plan (for 6 gallons at 1.050):

7.25 lbs 2-Row
0.50 lbs C20
0.25 lbs Cara-Pils
2 lbs Briess Golden Light LME at end of boil (I only have capacity for 8 lbs of grain - for reference, it is supposed to be 99% base malt + 1% Dextrin)

Mash 148 - 150 F

1.0 ozs Simcoe (12.6%) @ FWH
1.0 ozs Simcoe (12.6%) @ 15
1.0 ozs Simcoe (12.6%) @ 10
1.0 ozs Simcoe (12.6%) @ 5
2.0 ozs Simcoe (12.6%) @ 0 (added at 170 F, and steeped for 30 minutes)
2.0 ozs Simcoe (12.6%) Dry (7 to 10 days)

I usually dial back the FWH hop time in the calculator. Setting it at 30 mins gets me 50 IBUs. Is this enough when it is primarily coming from FWH.

This will only be my second beer where the only early hops were FWH. The first was a Rye pale Ale, which came out pretty damn good.
