I just had a few questions out of curiosity.

Through reading a lot of posts and other guides, people talk about minimizing air contact and sterilizing everything to prevent infection.

What kinds of infections/off flavorings/problems can cider have? (and if you know some about beer, that's welcome too).

Basically, what are some signs that you have seen that mean something's not right with the brew?
 
Alls you need to see is that cider or beer bubbling away.
 
Well, I know how to tell when cider is done fermenting and stuff. I was just wondering if anybody had come across some warning signs (i.e. weird smells, films on top of the cider, odd tastes, etc.)

A friend of mine told me that you can sometimes tell what has gone wrong with a cider based on off tastes (fusel taste, sour, etc...)
