During the Siebel Institute Advanced Homebrewing Course (July 20-24, 2015), students are given professional-level training that builds on their basic brewing knowledge towards a complete understanding the brewing process tailored to a small-scale brewing system.

The course begins with a dissection of what makes an excellent beer by going step-by-step through the raw materials and processes used to create delicious, award-winning beers. "Our emphasis on hands-on exercises makes this an experience that goes way beyond any book." says Randy Mosher (author, instructor). "From malt tasting to hop rubs to an afternoon of yeast lab experience to a tasting of unusual brewing ingredients, this multidimensional learning enhances your understanding of the brewing process and gives you a richer understanding of what you're doing."

This course benefits brewers at practically every level of small-scale brewing. Instructor and Cicerone® program founder Ray Daniels states "No matter how long you've been homebrewing, there are always some nagging unanswered questions. Should I start run off before I start sparging? What's the best way to repitch yeast? How can I tell when my beer is carbonated? What does a proper grind look like for malt? Are my hops supposed to smell like that? What causes this flavor in my beer? The Advance Homebrewing Course gives you the chance to get answers to all your questions--and not by reading a book, plowing through confusing forum posts or listening to hours of YouTube videos, but by talking to and learning from experts in brewing who also happen to be veteran homebrewers."

Along with technical brewing theory, students learn the origins and signature elements of the full range of brewing styles as well as the sensory techniques used by professional beer analysts. "The class is poised exactly on that balance point of science and art, those two vastly different but equally necessary points of view needed to make great beer." says Randy Mosher. Participants will learn the principles of yeast selection, fermentation and maturation with Dr. Chris White of White Labs, who also introduces students to basic lab work using microscopes, hemocytometers and a variety of other affordable accessories that will build your practical lab skills.

Students will also travel to a local microbrewery for a day of brewing with Chris Graham, COO of More Beer, where he conducts a "hands-on full mash & brew day" using a top-of-the-line More Beer Sculpture brewing system. Chris gets into detail regarding timing of each critical brewhouse process, providing close-up views of valve operations, pump utilization, effective milling techniques and much, much more, all while students are surrounded by professional brewers working in a commercial microbrewery environment.

Not all the learning is done during the day, as students get to explore the exploding beer scene in the Windy City. With over 40 local breweries and too many beer-friendly bars and restaurants to count, this city offers beer culture like you have never seen.
