Hey all I've been brewing for a good bit now and decided to go back to the basics. Wanted to try brewing some all grain beer kits for the heck of it. Tallgrass Halcyon (All Grain) from Northern Brewer is next up this weekend. I will be using wlp007 for the yeast and am wondering if it would hurt anything by adding gelatin and fining like normal? I'm not too worried about the yeast part of it because wlp007 seems to be an insane floccer if the egg drop soup looking starter is any indication. However, I didn't know if fining a wheat ale would be against the "style" per se. This will only be for personal consumption but I'd like to keep it in the realm of a to style American wheat. I plan on fermenting around 63F with this yeast. Never used this before but wanted to keep the esters at bay. Anywho would fining with gelatin come down to more of a personal choice as far as clarity or would it actually affect the beer negatively?

My opinion is that certain styles should be hazy and others should not. To me, a wheat beer should be hazy.
