Hello there,

I am brewing the Liberty Cream Ale from Midwest supplies: https://www.midwestsupplies.com/liberty-cream-ale-extract-beer-kit

I have some extra simcoe hops lying around in my freezer from sometime in the past. Would this cream ale be good with simcoe hops?

There’s 2 oz of cascade hops in my cream ale recipe. None of which are dry hopped. Should i dry hop? Or add to my boil? Or not introduce the simcoe at all?

I wouldn't. Simcoe is a great dual-purpose hop with citrus and fruit notes. It's great in IPAs, but I feel it would ruin a good cream ale. Just my opinion.
