Should I bottle now?

This is my first brew I purchased a starter kit from a local store. Its a pale ale 5 gallons after 5 days the airlock has stoped bubbling. Should i bottle now or wait the kit said to wait 7-10 days.
 
Let the sh@t settle and have a home brew - Forget the instructions and give it time. More time, better brew. Take a gravity reading if you can't take it any longer and if you're really "daring", rack to secondary and let it condition for a couple weeks! Honestly, if you're chomping at the bit, let 'er sit and do a new brew!!
 
C'mon guys, be realistic...its the cherry...did YOU wait?!?!? Your beer WILL taste better if you wait to take your beer off the yeast cake. I consider 2 weeks to be a minimum and that is for lower gravity beers (1.040-1.050 range), 3 weeks for mid range brews and 4 weeks minimum for bi beers. It gives the yeasty beasties time to clean up the sloppy mess they made during active fermentation by sopping up diacetyl (buttery), acetaldehyde (green apple), and various other off flavors. It will also result in a clearer, cleaner final product.

The recipe makes a big difference, so what did ya brew?

Folks will also tell you to wait 3 weeks to taste your bottled beer but that won't happen either! Sample after a few days, a week, another week, etc. You will gain a better understanding of the process your beer is going through and won't have to take anybody's word for it that time makes your beer better!

You absolutely have to taste as it bottle conditions. For the sake of science!!! ;-)
 
gravity is 1.012 taste sour

Recipe? Not much else we can tell you without more info about your recipe and process.

1012 is a pretty good final grav, but you won't know unless it is stable at that reading for a minimum of 3 days. If you check it in 3 days and it is 1011 or 1010, wait another 3 days and check again...or just leave it alone for a couple of weeks :D
