Other than the under the bed storage container (pictured below), what else could I possibly use?

I'm tempted to just go with the above. They are not airtight which is good so the Co2 can escape but not let contaminants fall in. Seems like it would be hard a hell to sanitize though. I'm thinking about possibly thinking about adding a ball lock spigot with plastic tubing for easy transfer to packaging too.

Looking for a more elegant solution; any ideas?
 
Maximum ester and phenolic production in Belgians. I want to see how much difference fermentor geometry has on the home brew level so I can get closer to that authentic Belgian flavor.
 
you will have a hell of a time trying to rack off of that. wide and shallow means more beer left behind.

if, for example, you always rack off beer untill the last 1/2" above the top of the yeast cake to avoid that getting to the beer (the depth is constant), if your fermentor is round and 10" wide, you will only loose 157 cubic inches of beer.

if your fermentor was 30" wide, you would loose 1413 cubic inches of beer. if the total volume was constant at 5 gallons, you can see that you are loosing a much larger percentage (exponentially larger) of the total volume when using a wider fermentor.
