I know there was a run on this "style" at the end of the summer, but life happens so this had to be pushed back to a January brew for me. Im trying to keep things simple on this one, was on the fence to turn it into a SMASH but decided to tweak it a little, any thoughts on this...

Session Pale Ale
Eff. 70%
OG 1.059
FG 1.015
IBU 41.19

11.0# 2 row
0.50# C40

1oz Simcoe FWH
.5oz Amarillo 15'
.5oz Amarillo 5'
.5oz Amarillo 0'

Wyeast 1056

My goal is a fairly easy to drink IPA, bordering on a Pale, no caustic hops, in the vein of a Founders All Day. Leaning towards the First Wort on the Simcoe to mellow the acrid but pull the flavor (and to just play with something new). Any thoughts on this one?

Founders also has 4 oz. ea. of flaked maize, flaked oats, red wheat and rye malt. As for hops, you are on target, they use .5oz ea of simcoe, amarillo, and crystal in dry hop. You wouldn't think the crystal would matter, but something is missing without it. This is from a clone kit from AHS that was amazing, most club members thought it was better then the original.

For a session beer, the gravity is too high. Try working with something sub 1.050.

For IPA flavor, you want more hops. Maybe 6 ozs or more, with most in the last 15 minutes.

Thank you for the input, I will look into the addition of Crystal hops to this, and a dry hop addition. I had thought that the gravity might be a bit high, and had considered dropping the base malt to 10 or 10.5.

I do also know that one of my major weaknesses is efficiency, and need to really dial that in, so I tend to shoot a little high on the gravity.

I found this beer in a brew pub in Boston. I fell in love with it the first time I tasted it. I stalked the brewmaster... He ended up leaving that establishment and starting his own brew supply store. He's published the recipe and I now try to keep a keg of this on tap at all times. This is the best beer I've ever tasted anywhere (IMHO).

I may also invest in building one of those inline hop filters, dont think there is a name for them, so that i can bump up the IBU's during serving from the keg.

This recipe is perfect for a Kolsch yeast. although they(2565,2575) take 4 weeks in secondary to clear it will be awesome.

Revised.

Session Pale Ale Revised (working title: Transcon )
Eff. 65%
OG 1.053
FG 1.013
IBU 54.89 (51.16)

10.0# 2 row
0.50# C40
0.50# Flaked Rye

1oz Simcoe FWH
.5oz Amarillo 15'
.5oz Amarillo 10'
.5oz Amarillo 5' (optional - as i am shooting for something on the lower end of the hop range i may not add this, as the style guide puts the IBU range at 40 - 60 this would still keep it in range with out this)
.5oz Crystal 5'
.5ox Crystal 0'

Wyeast 1056

How has your attenuation dropped so much from the previous one? I'd bring OG down just a notch closer to 1.050 and add dry hopping. Grist looks cool. I like that gentle rye twist.

The rye was suggested by hotpeper13. As for the attenuation I may not have set up the program the same when I ran the two recipes through it.
