Hey guys,

We've been successfully brewing 10-13 gallon batches for the past 3 years and had a session side-beer come out stale/oxidized tasting straight out of the primary fermenter when we drew a sample from the (freshly kegged) keg. This beer hasn't been racked other than for kegging, dry hopped, or bottled, and it was siphoned into the keg so its had limited exposure to oxygen.

Has anybody else experienced stale flavors straight out of primary when kegging? It was a 13 gallon batch with 10 gallons of IPA and a 2.5 gal session pale ale. The other 10 gallons taste great but the session has a strong nutty/cardboard/stale flavor that kicks in as a strong after taste. I cant believe it got oxidized during the 1 week of fermentation. I was thinking it was possibly hot-side aeration from pouring from the raised mash tun into a smaller pot on the ground but it seems like hot side aeration has been somewhat debunked.

Other than blending with something dark or strong, is there any way somebody has recovered an oxidized beer?

Mash: keggle mash, 50% 2 row, 50% marris otter, drew 13 gallons for our 10 gallon batch, sparge hit a final gravity of 1.030 so we pulled another 2.5 gallons from it - hitting a new gravity of sparge liquid coming out at 1.015.

Boil: 1.02 pre-boil gravity, boiled for 90 minutes, added 1.5# DME to bump up the gravity 30 mins before end of boil. 2 Oz hops at 60, 2 oz simcoe hops at 0 flameout. Chilled with immersion to 90 degrees, poured into 3 gal better bottle.

Fermentation: 1.038 OG - 3 Gal better bottle w/ airlock - topped up to 2.5 gals wort. Put it in pool of water in bathtub, pitched a healthy volume of washed yeast once it hit 72 degrees (same yeast that was used in one of the 5 gal carboys). Fermentation looked normal.

Kegging: 1.008 FG. When we kegged the beer 1 week after fermentation. We purged w/ CO2 and immediately took a sample. Great hop aroma, great hop flavor.... then a full 1 second after your sip you get hit with wet cardboard taste (no odd aroma).
