question do you guys use a separate keg for sour beers ? I know they reccomend separate plastic fermenter and siphons but since corny kegs are metal is that really neccesary ?

I used to go out of my way and use different everything but as long and your sterilization is on point you’re fine. Especially if it’s a lacto strain they can’t work in hopped beers so let’s say some gets stuck in the keg or fermenter, they won’t be a problem

It depends on what you mean by sour. Lacto probably not necessary as Dgalllo mentioned the AA and alcohol will keep mild strains in check. If you're talking pedio or brett, I would sanitize with iodophor and have dedicated o-ring sets and draft lines.

For kegs, I've just broken them down completely, given an extended PBW soak, then sanitize before storing, and then sanitize again, without issue. YMMV.

My plastic fermentors get an extended bleach bath with a high-strength bleach solution. The benefit of idophor and star-san is that they are no-rinse sanitizers, which makes them ideal for brewing. Bleach is not and must be rinsed, so there is the risk of re-introduction of microbes on rinsing. However, if you want to kill everything, bleach will do it.

I do mark my "soured" fermentors just in case, but right now my vienna lager is sitting in one.
