Hello,

I made a Weinhenstephaner clone last week. All was good from the primary. After two days in the secondary it became infected. I sanitized everything, well at least I thought I did. This was my first infection in a beer in probably 3 years. I'm trying to pinpoint it. Wheat beers by nature tend to be hazy so I wanted to try to experiment. To clarify the beer and added diluted gelatin in a cup of hot water. I've been doing this for quite some time in secondarys with much success. Could the hot gelatin water reacted to proteins left in the secondary from the beer and cause an infection or is it most likely a sanitation issue? There was a bit of yeast in the secondary. I didn't cold crash.
