Hello. A few months ago I posted on here for my first time making the cider, saying how it went badly. I moved so I could not try again until now, and wanted to give update and ask some question.

I was maybe to complex last time, and it failed because of that. So this time I decide to do it much more basic. I collected apples, washed, pressed and put in the fermenter. I got star-san and cleaned it instead of home options. I had about 6 liters of juice. I put in some cider yeast and let it sit. Very basic. I read usual ferment is 2-3 weeks (please correct me if I am wrong!), but this was a small amount so I tasted around 12-14 days. The flavor is mild, with a very light sparkling. My wife tastes alcohol in it, I do not (but that's expected for me).

So I am thinking to leave it some more days, but I want to ask some questions.

1. Should I let it sit more?

2. I want it sweeter, so what should I do for that? Brown sugar? And should I keep in the fermenter or the carboy?

3. If any of you have simple recipes to share I will try!

Any other advice is welcome :) thank you
 
My semi-sweet go-to during cooler weather is very simple...

5gals 100% juice
6 cans FAJC
1pak S04

Ferment 7days.....cold crash 2days....toss back in 1gal containers & add 100% (zero added h20) fruit juice concentrates from Brownwood Acres & cinnamon sticks....

Typically end up with ABV ~ 6.8%

Typical OG 1.068 & FG 1.016-18

Tastes great immediately!
