Hello,
- I want to start making kombucha again after letting my Scoby grow for several months. It looks healthy and is so huge that it fills 2/3 of a gallon jar with very little tea left.
- How do I restart kombucha-making? There aren't even two cups of tea to start a new batch and what happens if I don't get more liquid in the jar soon enough?

I think you can just Pour more sweet tea into your hotel and wait a few days to a week.
