Ok I tried to hold off on asking this. :) I searched around, and read what I could, so I'm definitely not, "worried." I'm just anxious to take a reading, and get a sample since my wine thief finally arrived today... LHBS didn't have them for a while and ordered on line...

So I brewed/pitched a Saison a little over 2 weeks ago (15 days) Used Wyeast 3724 with a 1.5l starter (with a stir plate.)

So after a few days of Krausen it dropped down and left me with a thin skin of bubbly... goo (pics bellow) Although it's kind of hard to see it in my pics, from reading HBT it looks similar to some other posts I've seen where people say it's normal (so I'm not worried...)

So long post short... Do I sample through the goo, or should I wait until it starts o sink in a bit more? Will it sink in, or will this goo kind of remain?

I want to take a sample- but should I be a little more patient and wait another week, or is it safe to dip my wine thief through there to grab a sample?

(By safe I mean is there definitely still fermentation going on, as opposed to safe to ingest...)

It wouldn't hurt you to pull a sample now if you wanted to but regardless don't bottle till it clears up. You probably knew that though.

That looks like remaining krausen. I made a belgian wit that the krausen never fully dropped and I racked to my bottling bucket with a floating layer on top still. You can try to lightly swirl it without getting it splashing to see if that will help it drop.

I would just carefully stick your sanitized thief through and grab your sample.

Thanks all... I think I will try to steal a sample tonight. :) Just hope I don't get any goo in the sample jar.

I've read that Saisons tend to be notoriously slow... So I'm prepaired to wait... Luckily SWMBO was as excited to buy another carboy/ingredients for another batch as I was... Next up- Belgian Wit! :D

(I'm also sdding the goo to my list of reasons I suspect the first batch of fermented beer was drank as part of a dare...

"Throgg bet Ogg too much of a cavechicken to drink bubbly goo in pit!")

Even if ya suck up some "goo", drink up, it won't kill ya. Or even make you sick for that matter.
