Trying to workout a basic, clean low(ish) abv saison recipe. Would like to include rye for some spiciness (and body), but not sure if this would work. Any feedback is appreciated!

Pilsner - 6 lbs (60%)
Wheat (flaked) - 2 lbs (20%)
Rye - 1l bs (10%)
Vienna - 0.5 lbs (5%)
Sugar - 0.5 lbs (during boil)
 
Looks like a Saison grin bill to me. Not that much different from one I made yesterday. I like rye and some color malt (e.g. Vienna, Munich, etc) in a Saison.

If I brewed that with my system (75% efficiency), I'm not sure I'd call it low(ish) ABV! For example, I think what I just brewed had 7 lbs total grain and I expect it to be just about 5% ABV - overshot my OG by a few points.
 
If you want the rye to come through you will want 20% or so. I would Cut the flaked wheat and add 10% Flaked Rye other 10% would go back to pilsner. I would also cut the sugar and just mash at 148° Most saison strains should get you to 1.004 without sugar. Some strains like belle saison produce a fair amount of glycerol which would provide body. I dislike that strain personally and feel like the flaked rye and wheat will provide enough body. If you want to create a little more body do a 60 minute rest at 148° and a 20 minute rest at 155°

Pils 70%
Rye 10%
flaked rye 10%
Wheat 5% or 10%
Vienna 5% or none
