A week ago today, I brewed a batch of Agave Wit (partial mash) from Austin Homebrew using the Safbrew T-58. I was wanting to get this batch into a secondary as soon as I could (without disrupting the fermentation) so that I could get another batch going. I was planning on waiting at least 2 weeks to do so, but I took a gravity reading this morning and the stuff was already down to 1.012--FG is supposed to be 1.014.

OG was 1.058, FG is supposed to be 1.014..

Any suggestions?
 
haha! the sooner I can brew the better, right? Yeah that T-58 is some kind of Barry Bonds steroid yeast.. it was churning away 2 hours after i put it in the ferm after my brew! good stuff though
 
i racked about 24 hours ago, but i've noticed that the top of my beer is much darker/clearer than the bottom half.. i assume this is yeast and other particles settling out??
