I did a search on what people thought about Safale T-58, I didn't have any of the exact recommended yeasts for a kit but T-58 was on a substitute list. Seems like some mixed reviews on slow starts and wide temperature use. I just wanted to throw my .02 out there. I pitched two satchets in a 1.079 OG and within a few hours I was cleaning off the PRV. Same for today, keep cleaning out the foam from the starsan in the PRV, which I finally swapped for some RO water. Not that most give much to Tilt readings, but as of this afternoon I am getting a 1.024. If it actually is within a few or 10 points then wow did this yeast go for it.

I brewed the NB "A Christmas Ale" kit, and from a few previous posts, did a 145F mash. I think this one will come out good. Still going to let it go for 7-10 days and see what my hydrometer shows. Should end up between 1.012-1.018. So far, I am liking this yeast.
 
So far my only "problem" with T-58 was when I decided to see what happened if I let it run at 80-85F in the garage. THAT will not be repeated. But I have liked using it in a more normal temperature range (65-75F).
 
Nice. My tilt reading this AM was 1.011. I know the Tilt isn't 100% but my experience with them is usually within a few points. Going 1.079 to ~1.011 in 36 hours is impressive!
 
first time using this yeast. I had a taste today. Gave me the impression of a hefe. Going to let this keg condition for awhile. Will probably add more coriander and/or cinnamon stick to try and keep that christmas feel.
