Brewing a holiday red ale and using Safale S-04. First day fermenting it went bonkers and even in my 68f room, it hit low 70's for may be a day, or less.
The rest of the time I've been leaving windows open, fan and covering the carboy with wet towels and that has kept the temps in low 60's since then.
So, I know this yeast it recommended to ferment in mid 60's I believe, but this fast fermentation was quick and while I'm leaving it in primary for 3 weeks, I'm wondering if that first day of low 70's will produce any off flavors, esters, etc. Even though I've been keeping it regulated I'm the low 60's since. Haven't taken hydrometer reading and won't bother. I'll check FG at 3 weeks as I always do and I don't touch anything or open it during that time.
Pitched at 72F btw and moved it into my 68F room thereafter. Didn't realize this yeast was picky, and have never had any issues before and don't anticipate any now, but it's my first time with this yeast.
Any comments?
