1.076 wort, two packs of s04, a blowoff tube, and three days later it’s completely clear. I pitched at 62*F. It rose to 66*F in my fermentation fridge. I just moved it inside to warm up to 70*F to make sure the yeast have finished. If I’m at terminal gravity should I transfer to keg? It’s just bizarre how one of the biggest beers I’ve done finished the fastest.
 
I love S-04. Not appropriate for all beer styles but works in most.

Usually fast and clean except for that British fruitiness, which I like.

It settles fast and compacts well. Hard to stir up in the bottle when pouring.

I'd say after 2-3 days of conditioning at 70F room temps you may keg it. Taste some, and perhaps let her condition a few days extra in the kegs, if needed. Otherwise, chill, burst carbonate and enjoy!

I do 3 day NEIPAs, grain to glass. ;)
 
This would make an excellent thread! I've been double pitching and messing with temps to ferment faster. It works for sure.
I'll see what I can do.
It lacks any visual documentation, which I would have liked to include as proof.

I'll be brewing a few NEIPAs next week, but may let them go the regular week. ;)
