The rubber stopper I have for my 5 gallon plastic bottle is too big. Has anyone tried to cut down or modify?

Seems like it would be very difficult to accomplish. I would find another option for the mean time and get the right size stopper.

As kh54s10 said (twice), your best bet would be to get the right size. They come in a slew of sizes.

If you do need to cut it down before you can get to the homebrew shop, I would suggest using a razor knife with anew blade. It's going to be nearly impossible to get it perfectly round though.
